The chipilín is a plant native to Mexico, specifically in Chiapas, a state in the south of the country. It is common to find it in some traditional dishes and even in medicinal recipes, as it is a rich source of vegetable protein, high in iron, calcium and beta-carotene.

The chiplín is considered a quelite, coming from the Nahuatl word (quilitl) that is used to name various species of tender and edible wild herbs, its flavor is dominant, which is why it is not accepted by the palate of some people.

For being a traditional plant that has remained for many years in ancestral recipes. Legend has it that the name is attributed to it because a princess named Chepel'ixh was forced to marry the God of rain (Chac).

When the princess refused, the God expressed that a curse would fall against his people and would send famine, clouds and rain. To avoid the tragedy, the princess agreed to marry, but when she realized that it was all a hoax, she sacrificed herself in the eyes of God. In this way, the princess became chipilín, which also means moon eyes.
