The Anaheim chile is a variety of chile native to New Mexico, United States, but it has become popular and cultivated in other parts of the world, including Chile.

From the Nahuatl chili, a plant native to America. It has a high content of vitamins C and A. During pre-Hispanic times, its cultivation was already known. It has an elongated shape, measures 15 to 20 cm long and 2 to 3 cm wide, meaty and spicy. Also known as "chile para dehebrarar". Its color is green and when it reaches maturity it becomes darker. It is best grown in warm, well-drained soil. Lack of water and low temperatures affect its development.

The flavor of the Anaheim chili is sweet and mild, with a mild to moderate heat.

It is also known as the California green chile, the bola chile, and the New Mexico chile colorado.
