Cumin is a herbaceous plant whose aromatic seeds are used as a spice. Originally from the Mediterranean basin, and now also spread throughout America, it is a plant with historical importance.

The medicinal use of cumin is demonstrated by its presence in the Capitulare de villis vel curtis imperii, an order issued by Charlemagne calling on his fields to cultivate a series of herbs and seasonings including the "ciminum" currently identified as Cuminum cyminum.

Cumin is an annual plant that can reach a height of 60 to 90 cm, with long, thin leaves, small, white or pink flowers grouped in umbels, whose spindle-shaped seeds also constitute a spice with the same name.

Cumin has a characteristic bitter taste and a strong, sweet smell thanks to its high oil content. It is associated with Indian cuisine because it is present in curry, and with other cuisines (North African, Guatemalan, Paraguayan, and in a minority Mexican), although its use is widespread in Spain, especially in the cuisine of the Spanish southeast.
