The mulato chile is one of the two dried varieties of the poblano chile. Mulattoes are fully ripe dried poblanos, while poblanos that are harvested early and dried are called ancho chiles.
From the Nahuatl chilli, a plant native to America. It has a high content of vitamins C and A. During pre-Hispanic times, its cultivation was already known. It presents large (12 cm average) and fleshy fruits with a flattened conical shape with some undulations, generally dark green (sometimes light green) with a shiny skin that changes to bright red or pale red as it matures, a hue that turns reddish brown. in the nuts. It has a slightly sweet fruity taste. This variety is one of the most used dried chilies in Mexican cuisine, ideal for filling, sauces, moles, marinades and various stews.
In some places it is known as chile seco, chile pasilla, chile negro or chile de color. However, it is important to note that the pasilla chile is actually another variety of dried chile than the Ancho chile, although both are widely used in Mexican cuisine.
It is best grown in warm, well-drained soil. Lack of water and low temperatures affect its development.
