Seeds of Chile Cascabel

The “cascabel” chile is one of the most used varieties in Mexican cuisine. It is similar in size to a cherry, round, spicy, and reddens when ripe. The chiles of this variety are used dry, since that is when they receive their characteristic aroma. The name "rattle" is due to the sound that the seeds make inside the fruit when it is dry.
