The name spaghetti squash comes from its unique flesh. If you cook it, the fibers give the squash very distinctive strands that look a lot like orange spaghetti. The added texture makes this spaghetti squash a favorite with kids, who turn their backs on the softness of other types of squash. These are all very healthy and are generally consumed more as a starch than a vegetable in a meal. You cannot eat spaghetti squash raw. Likewise, it is best to bake it. The inner flesh is scored with a fork to help achieve the “spaghetti” appearance of the squash. It is extremely rich in vitamin A. In addition, it is a good source of potassium, fiber and vitamin C.
