Romanesco broccoli is an edible flower bud. First documented in Italy in the 16th century, it is lime green in color and has a shape that naturally approximates a fractal. Compared to a traditional cauliflower, it has a firmer texture and a delicate nutty flavor

Its optimal season runs from September to April and its caloric intake is very low since 90% of its composition is water, although of course, it will depend on the way it is cooked. It is an excellent source of vitamins, especially vitamin C, whose concentration is much higher than that of other cabbage varieties, and vitamin K, essential for proper blood coagulation. It also highlights its high content of provitamin A and folic acid as well as minerals, especially potassium, phosphorus, magnesium, iron and calcium. In addition, and as if that were not enough, it is rich in fiber, which improves intestinal function and favors weight control due to its satiating power. One of the characteristics that it shares with broccoli and cauliflower is sulforaphane, which has properties to prevent cancer.
